To Broil:
Preheat broiler.
Lightly brush food with oil and season with salt, pepper, and any other herbs or spices.
to control cooking time, adjust the distance between food and heat source by lowering or raising the oven rack on which your broil pan is resting. Once the first side browned, flip food items. The second side will cook faster since the food is partially cooked.
Watch closely and remove when second side is browned.
Best foods to broil are rib and loin cuts of meat, boneless chicken, fish, shellfish, vegetables, and breads.
The thicker the food item, the lower your oven rack should be.
Using tongs to flip food will keep in natural juices.
If you will not use the pan drippings to make a sauce, line the bottom pan with foil for ease in clean up.
